Potato Leek Soup with crispy pancetta

I was on pinterest the other day looking through some of the recipes I had pinned (read: thousands of recipes). Sometimes I go looking for new recipes instead of browsing through the delicious recipes I’ve already pinned so this time I decided to look through what I already had in my “pinterest archives”. I found SO many awesome recipes that I had forgotten about pinning. In particular, I was looking for recipes for soup. I’ve been craving soup lately I guess because it’s starting to get cold again. I found this particular soup while I was browsing and thought wow, that looks pretty delicious. Often times I find recipes and wind up changing them completely. I use the recipe for inspiration and then create my own spin-off depending on what I have on hand in my pantry and fridge and what I’m in the mood for. The pinterest recipe was a slow cooker recipe, which I definitely had not planned ahead for and I had other ingredients in my fridge that I thought would work really well with this soup. Labor Day Potato Salad (without the Mayo)

Hopefully everyone had a great Labor Day Weekend. I enjoyed a blissful 5 days off from work and spent 3 of those days at the beach. It was a good way to offically end summer, although I’m pretending summer isn’t really over yet. I love the warm days and if I’m being honest, I’m never really ready for fall.

Yesterday (Labor Day) we spent the day at my parents house. My mom and I both are trying to lose a few pounds, especially after the extra few we picked up vacationing at the beach so our Labor Day spread was actually very healthy. We had pork tenderloin, hot dogs and sausages for those that wanted them, and TONS of vegetable side dishes including grilled yellow squash, zucchini two different ways (grilled and sauteed in a creamy sauce), salad with homemade croutons, cucumbers in sour cream and vinegar, a cucumber and tomato salad with cilantro, my signature guacamole, and last but not least, a mayo-free potato salad. Smoky spiced potatoes and chickpeas

Some of my favorite meals don’t include meat. I’m not a vegetarian but if I had to cut out one food group it would definitely be meat. I just don’t crave it the way I do other food groups, like carbs, unfortunately. Sunday night’s dinner was yet another meatless meal for me. I wanted something with a bit of an Indian flavor and this is what I came up. In this dish, potatoes and chickpeas are flavored with garlic, ginger, cumin, turmeric and red chili flakes. One of the most important components of this dish is the carmelized onions. I let the onions cook probably for about 15 minutes until they turned a deep brown color and became really sweet. This really adds an amazing deep flavor to the dish so be patient as they carmelize. Greek yogurt, cilantro and lime are the perfect finish to the meal and add a nice freshness to the potatoes and chickpeas.

Side note, I also made beef enchiladas, courtesy of The Pioneer Woman, because unlike me, my husband eats a lot of meat. Continue reading
