I couldn’t think of what else to call this recipe. It’s sort of a combination of turkey chili and fried rice. Or maybe it’s just a chili recipe that I added rice to. Whatever. It’s not a very creative name but the recipe itself did turn out yummy and it comes together really quick too.

It was a last minute dinner, as many of mine are, and I came up with this recipe as a way for me to clean out my fridge and pantry. I used ingredients I always have on hand like rice, diced tomatoes, black beans, onions, garlic and spices. These kinds of dinners don’t always turn out well but in this case, it did. It’s pretty healthy too. Except I served mine with a generous helping of cheddar cheese and a big handful of crunchy tortilla chips. I wound up eating the “turkey chili rice” like a dip, using the chips as my utensils. So, if you eat it that way it’s not that healthy. It’s pretty good on it’s own too so the chips and cheese are optional. Continue reading

Easy steak & black bean quesadillas

Mmm…Quesadillas. These quesadillas are my go to quick, easy and satisfying dinner. What’s not to love about a warm, crispy tortilla oozing with melted cheese and meat or vegetables? The awesome thing about quesadillas is that they are incredibly versatile. You can stuff them with just about anything as long as you start with a tortilla and cheese. You could leave out the cheese but why on earth would anyone want to do that? Plus its the glue that holds the quesadilla all together. So, scratch that. You cannot make a quesadilla without cheese BUT you can make them vegetarian or use chicken, shrimp, beef or any other kind of filling you prefer. Continue reading

My favorite restaurant at the Jersey shore

Believe it or not my favorite place to eat at the Jersey shore is not a seafood joint. Most people really look forward to the fresh seafood when eating at the beach but my favorite beach restaurant happens to be a casual little restaurant that serves up Mexican and Tex Mex food. Ever since we moved to New Jersey, my family has been taking summer vacations in Wildwood. I have eaten at numerous restaurants there, some fancy, some casual and dinner at Bandanas Mexican Grille is still the meal I look forward to the most. The festive atmosphere and the delicious food keep me coming back each summer. And, by the way, I’m not a dessert person but the dessert here is FANTASTIC.

Blue Moon Mexican Cafe

I don’t know very many people who don’t like Tex Mex food. Crunchy, cheesy goodness is hard not to like, which is why I was so excited when we stumbled upon the Blue Moon Mexican Cafe in Engelwood, NJ. Not a native to the Engelwood area, I was walking along what seemed to be the main street in town, looking for a place to eat. There were tons of restaurants¬†around, but for some reason the Blue Moon caught my eye. Even from the outside, the restaurant looks festive and welcoming. Continue reading
