Ultimate Turkey BLT’s with Dill Mayo

 

Sometimes I think sandwiches are just about the most fabulous thing you could eat. I definitely eat way too many of them and could probably cut back, but sometimes they really do make the perfect meal. On Friday night it was rainy and kind of cold out for July, and sandwiches sounded like the perfect comfort food for dinner that night. Sandwiches with bacon, no less.

I had some bacon, some thinly sliced turkey (the only way I like it on a sandwich), tomatoes, and lettuce and some good sourdough bread. So, I thought I’d make turkey blt’s. Then, I remembered I had some fresh dill that I really needed to use up. I decided to try my hand at making a dill mayonnaise. Turns out, it was exactly what the sandwich needed to kick it up a notch and you won’t believe how easy it was!

For the Dill Mayonnaise:

1/4 cup fresh dill chopped

1 cup reduced fat mayonaise

the juice of 1/2 a lemon

1 clove garlic chopped

salt and pepper to taste

 

Combine all ingredients into the food processor and pulse until all ingredients are combined nicely.

Tip: Instead of 1 cup of mayo, you could actually do 1/2 cup of mayo and 1/2 cup of sour cream and that would probably be delicious. In fact, if I had sour cream on hand that night I probably would have made it that way.

For the sandwiches (makes 2 sandwiches):

4-6 slices crispy bacon

thinly sliced turkey deli meat (make sure you buy good turkey)

lettuce or some kind of leafy greens – any kind you prefer. Ice berg lettuce, bibb lettuce or butter lettuce (would be awesome!), spinach, arugala.

2 tomatoes thinly sliced

4 slices of good Sourdough bread

Dill Mayo (recipe above)

 

 

1. Toast the Sourdough bread.

2. Spread a generous amount of the Dill Mayo on BOTH sides of the Sourdough bread (this is not a diet sandwich).

3. Start layering the ingredients. Bacon, tomato, turkey, and lettuce. Don’t be stingy. This is meant to be a substantial sandwich.

4. Top with the other piece of sourdough bread, slice in half, and enjoy!
