Lentils – the easy way

Lentils are not a hard thing to cook, but I’ve noticed they can take a long time to absorb liquid and become tender. I’ve discovered an even easier way to prepare a lentil dish. I buy pre-cooked lentils from Trader joes. It cuts my cooking time in half! Continue reading

Sometimes you need a little help from the store…

Obviously, scratch-made food is always better than store-bought, processed food. Anything home made usually tastes better and is probably better for you. In a perfect world, I would grow my own vegetables, bake my own bread, and make everything from scratch. Actually, I’m not sure if I really would, but the fact is that that’s not a realistic lifestyle for me anyway. Working full time, living in an apartment, and a busy schedule don’t always allow me to cook from scratch. Happy Birthday to me!

My quarter century birthday (or 25th) happened this month and celebrations ensued. I feel so blessed because not only do I get to celebrate my birthday once, I also get to go out with my family, my husband’s family, and my friends. It’s nice to feel loved :). Diet Food

I am, by no means, an expert when it comes to dieting. I am not a health guru, personal trainer, or dietician. I’m just someone who tries to eat in moderation and also happens to enjoy indulging in not-so-good-for-you-foods on occasion. I’m also a Weight Watcher’s member. The reason I like the Weight Watcher program is because it doesn’t restrict any foods. The program is not so much a diet, as it is a healthy lifestyle, based on eating more fruits and vegetables, exercising, and smaller portions. It’s a more realistic approach to weight loss, which is what I like about it so much. In addition to this, the point system and weekly weigh-ins keep me accountable. Continue reading

I don’t know very many people who don’t like Tex Mex food. Crunchy, cheesy goodness is hard not to like, which is why I was so excited when we stumbled upon the Blue Moon Mexican Cafe in Engelwood, NJ. Not a native to the Engelwood area, I was walking along what seemed to be the main street in town, looking for a place to eat. There were tons of restaurants around, but for some reason the Blue Moon caught my eye. Even from the outside, the restaurant looks festive and welcoming. Continue reading

Healthy Wontons

Who doesn’t love potstickers and wontons? The problem is these tiny treats are not the best thing to eat when watching your weight. Some are deep fried and loaded with fatty pork. They are definitely not low calorie snacks. Continue reading
