Potato Encrusted Tilapia

I’ve heard of coating fish, chicken, or other meat in bread crumbs or cheese…but covering it in potato sounded really strange to me. When I saw it on the menu, I ventured to try it because I do like potato, and I like fish so I figured it couldn’t be that bad. It was delicious. Like eating a cripsy hash brown – but better. If you don’t like fish, this is the way to eat it – covered in crispy, brown shreds of salty potato. The potato was crunchy on the outside, and the fish was perfectly moist and tender on the inside. I’ve found it’s very easy to dry out fish when you are cooking it.┬áBut the potatoes provided an extra layer of moisture for the fish. It was perfection! I will definitely order this again.
